Cottage Cheese Wraps

Ingredients

For the Wrap

  • 1 cup cottage cheese (small curd or large curd both work)
  • 2 large eggs
  • 1 pinch salt
  • to taste optional: garlic powder, onion powder, Italian seasoning, or smoked paprika

For the Fillings (customizable)

  • slices deli turkey
  • 1 shredded chicken
  • 1 cup salad greens
  • 1 cup cucumbers, sliced
  • 1 cup tomatoes, sliced
  • 1 cup hummus
  • to taste sauce like ranch, pesto, or hot sauce

Instructions

  • Preheat your oven to 350°F (175°C).
  • Blend the cottage cheese, eggs, and salt until smooth.
  • Pour the mixture onto a lined baking sheet and spread it into a thin rectangle.
  • Bake until set and lightly golden around the edges, usually about 25 to 35 minutes depending on thickness.
  • Let it cool for 10 minutes before peeling it off the parchment and filling.
  • Fill the wrap with your choice of fillings as desired.
  • Avoid overstuffing, especially with wet ingredients to prevent sogginess.

Tips & Notes:

Store wraps in the fridge for up to 3-4 days with parchment between each wrap to prevent sticking. You can freeze them for later, but the texture may change slightly after thawing.
